Caribbean Dry Seasoning

Step by Step Instructions

This is central to Caribbean Cooking it is usually used with Caribbean Herb Seasoning to give the food (meat, poultry and fish) that distinctive Caribbean flavours.

INGREDIENTS
1/2 ts Clove
1 ts Garlic powder
1 ts Sugar
1 oz Onion powder
1 oz Dry Thyme
1 ts Salt
1 Grated Nutmeg
1 oz Cumin
1 ts Cardamom pods
1 oz Dried chillies

 

Step 1

Mill the thyme, oregano, pepper, garlic, spring onion then stir in the salt and corn oil.  Once made, if stored in an airtight container, it will last in the fridge for up to six months provided that only clean utensils are used.  Use when required.
