Jerk Seasoning
Step by Step Instructions
This fiery seasoning is very much part of the Caribbean Imagination. To apply simply smear it over the surface of what you intend to cook leave for a number of hours. Just wait cook and enjoy.
Be warned this is not for the faint hearted. If the pepper in the recipe seems a bit excessive then please leave some out.
INGREDIENTS |
4 oz Broad Leaf Thyme |
2 oz Thyme |
4 oz Pepper |
1 tb Ground Pimento |
2 ts Salt |
1 tb Garlic |
40 ml Vegetable oil |
2 oz Basil |
Step 1
Mill the thyme, oregano, pepper, garlic, spring onion then stir in the salt and corn oil. Once made, if stored in an airtight container, it will last in the fridge for up to six months provided that only clean utensils are used. Use when required.
